I want to introduce you to my new favourite thing in the world. It’s deliciously sweet, wonderfully creamy, goes well with pretty much everything (as well as on its own!) and it’s even pretty good for you. That’s right – it’s coconut butter! I’d seen coconut oil on sale in my local supermarket for a couple of months, but the super-high price tag meant I’d never actually jumped into the deep end and bought a jar of the stuff.
Have you ever had a date? As in the small kind of ugly-looking fruit. Not like have you ever been out to a restaurant for an evening of awkward conversation with someone you don’t really know that well. I’m not trying to set up a singles site here. Anyway, I’m asking because up until about a year ago, I’d never had a date in my life. And up until a few weeks ago, I’d never actually had a date that I’d enjoyed. But now I can’t stop snacking on the things! And I’m going to share my secret with you so that you’ll be ditching the vending machine junk and grabbing handfuls of of the sweet fruit the next time a sugar craving hits, too.
If you’ve ever tried chia seed pudding before and were seriously disappointed in the results, I can totally relate! I jumped onto the whole chia seed bandwagon a couple of years ago and eat them every day – usually by sprinkling them on top of my oatmeal. I think they’re pretty great, so I thought for sure that I was going to love the chia seed pudding recipes that seemed to be making the rounds on Pinterest. But…no. Just no.
Here is a recipe I thought I would never, ever share on my blog. Even though I love taking popular recipes and making them healthy (seriously – I prefer these healthy double chocolate brownies to ordinary brownies!) I’ve never really got on with healthy snacks made from nuts and dates. That is until I made these babies. They are the closest healthy snack you’ll ever get to a dense, rich, fudge-like chocolate brownie, I swear.
This recipe has been sat in my “to publish” folder for so long that I can’t even believe it. Seriously – we’re talking about over one year here. But with the ever-approaching bikini season creeping up on us, I thought you guys might appreciate a healthy homemade snack recipe – and here it is! Easy to make, packed full of nutrients, totally portable and unbelievably delicious – what else could you want?
