Sleepless nights, being covered in bodily fluids that aren’t yours and bottle feeds every couple of hours. This is my life right now. Nope – I don’t have a newborn in the house (although I wish I did, I think it might be easier!) I’ve got three orphaned kittens who are 19 days old today. My boyfriend and I volunteer for a charity which traps then spays/neuters wild cats and fosters kittens until they’re old enough to be adopted. We’ve had these kittens since the very same day they were born and let me tell you – the cuteness factor is starting to wear off now.
Although I love my creamy lemon layer pie more than I could ever possibly explain, it’s got far too much sugar, fat and calories to eat on a regular basis. But, not wanting to deprive myself of generous slices of deliciously creamy and wonderfully zesty lemon pie – especially now it’s spring! – I decided to come up with a lighter alternative that I could indulge in a couple of times each week without feeling like a total pig afterward.
Ever since I made lemon curd for the first time ever way back in 2012, I’ve been wanting to make it again, but I never did – not until today! When you look at how much sugar, butter and egg yolks go into traditional lemon curd (and if you saw how much of the stuff I eat when it’s around!) you’d know that it’s not something you want a constant supply of in the fridge. But this vegan lemon curd is a totally different story…
