This Healthy Deep Dish Breakfast Cookie has been one of the most popular recipes on my blog since I first published it almost three years ago, but there was definitely room for improvement. Although it tastes amazing (really – it does!) I got a few comments from people who had made it asking for an even healthier version – and here it is! I kept pretty much the same ingredients, but added a couple of nutritional extras and substituted a few others. The result is an indulgent-feeling breakfast dish that really does taste like a chocolate chip cookie-cake combo, but is actually really good for you!

Before I start to tell you about how amazing this overnight oats recipe is, can I level with you? I’m currently sat in my dad’s spare room surrounded by his market stock as I type up this. The internet connection was lost in the entire municipality where I live (It’s the year 2015 – I never even knew such a thing was possible!!) and I had to resort to scrounging free internet off my dad just like when I was 16 and couldn’t afford it for myself. I really didn’t picture this small space being my work environment when I was 24.
