Sometimes I feel like the recipes I share with you guys are too simple and too fast to call them recipes. Today is one of those days. Come to think of it, last Monday when I shared a recipe for The S’mOreo was also one of those days. Maybe Monday should be fast and simple recipe day from now on at Pink Recipe Box.
But just like the recipe for an Oreo-come-s’more that I mentioned earlier, this whipped feta dip is just too good not to share with you guys. I always stand by the saying that sometimes the best recipes are the simplest ones and this recipe is the perfect example of that.
There’s so much going on in such a teeny tiny ramekin that I don’t even know where to begin. With every bite you get a smooth, velvet-like, airy texture that you’ll only get from thoroughly whipping the feta. Muddled amongst the fluffy texture are tiny pieces of torn, fresh Italian herbs which explode through the fluffy feta like rain drops bursting from a cloud. But in a good way. Not in a ruined-your-day-at-the-beach kind of way.
The sharp and zesty lemon juice works alongside the added rich cream cheese to bring all the flavours together into one heavenly dip which will disappear from your fridge before you’ve even had time to leave the ingredients to infuse, creating a flavourful and moreish summer dip.
Can you tell that I really like this whipped feta dip?
As well as eating it straight from the spoon which is totally acceptable, seeing as it tastes so amazing, there are loads of other ways you can use this whipped feta dip, too. You can spread it on toast, use it to top steak, spread it on a pizza base, use it as a sauce on a wrap or stir it in with steaming undressed pasta. If you have the patience and self-control to do anything other than eat it straight from the jar then you’re a better person than I am.
From an outsider’s point of view, this recipe involves little more than throwing some cheese and herbs into a blender and switching it on. There – done. But from a foodie’s perspective, this recipe is a magical combination of strong feta cheese, fragrant fresh herbs and citrusy lemon juice used to create what has now become my most favourite dip in the world ever ever ever.
How do you plan on eating this whipped feta dip?
Whipped Feta Dip
- 4 ounces feta cheese
- 2 tablespoons cream cheese full-fat or light - they both work
- 1 teaspoon olive oil
- 1 tablespoon lemon juice
- 6 leaves fresh basil torn up
- 1 tablespoon chopped fresh chives
- 1 teaspoon dried basil
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- pinch of salt and pepper
Place all the ingredients (except the salt and pepper) into a food processor and process for a couple of minutes until everything is well combined and the feta is thick and fluffy. Scrape down the sides of the processor bowl from time to time, if necessary.
Taste and add some salt and pepper if you think it needs it before serving.
