Apple Pie Granola

Let the apple recipes continue! When I've got the time I love making special breakfasts, especially when I can tie them into a theme or season. I've told you guys before how I'm not really keen on apples, but this? Oh this is totally amazing.

Granola + apples = a healthy breakfast, right? Plus it's homemade so its pretty much a sin not to eat this stuff.Unfortunately, this isn't one of my breakfast recipes that you can quickly whip up on a weekday morning - if you're looking for a recipe like that, check out this Healthy Deep Dish Breakfast Cookie.

You're best off making this on a lazy weekend or if you're super-organised, the day before you'll want to eat it. That way when you drag yourself out of bed, blindly feeling around for the switch on the coffee machine, you'll be able to grab your tub of apple pie granola and pour it straight into your bowl without waiting for it to bake or any nonsense like that.

I've had some disastrous results when it comes to making my own granola, but this worked first time, how amazing is that? I didn't follow any recipe, I simply went with my instincts and made a wonderful breakfast treat which is crisp, crunchy and tastes like apple pie. Win, right?

Apple Pie Granola

Print Pin Rate
Servings: 2 servings

Ingredients

  • 1 apple
  • 1 tablespoon white sugar
  • ¼ teaspoon cinnamon
  • 1 cup oats
  • 2 tablespoons whole wheat flour
  • 2 tablespoons Rice Krispies
  • 2 tablespoons brown sugar
  • 2 tablespoons water

Instructions

  • Preheat the oven to 350F/180C, peel the apple and chop it up into small chunks.
  • Place the apple in a saucepan alongside the white sugar and cinnamon and cook over a medium heat for around five minutes until golden and softened. Don't forget to stir regularly so the apple doesn't stick to the bottom of the pan.
  • When cooked, remove from the heat and stir the apple in with all the other ingredients. You're looking for a slightly damp consistency - there should be no powdery oats. Everything should combine and stick fairly well. If you think it's too dry, simply add more water 1 teaspoon at a time.
  • Bake for 40-50 minutes, or until golden and crisp. I was checking on mine every 10 minutes or so to make absolutely sure it didn't burn.
  • Leave to cool on the baking tray before storing in an air-tight container.

I'm stopping by from the Ginger Snap Crafts link party. My husband would love this, but I have a question - what kind of oats? Quick cooking?

    • Nicola Quinn

      Hi Amber,
Thanks so much for stopping by!
It sounds ridiculous, but I have no idea what type of oats I use. All it says on the packet is "oats"!!

I've done a bit of research and it looks like the best oats to use to make granola are old fashioned oats, although quick cooking oats seem to work, too.
Hope this helps and sorry I couldn't be more specific!

This looks yummylicious! Do you think I could omit the flour to make it gluten-free? Or is it such a necessity that I should use rice flour?

    • Nicola Quinn

      Hi Ellen,
      Thanks for stopping by!
I've never tried it without the flour myself, but I think it would turn out okay - it probably would just be more loose and less clustery.
Hope it works out for you! 🙂

  14. Colleen

Quick question on the apple pie granola - what kind of oats do I use? Quick cooking ones or old fashioned? Thanks. Colleen

    • Nicola Quinn

Hi Colleen! You can use any type of oats to make this granola, but most people prefer old fashioned oats 🙂

  15. Sheryl

I love the granola recipe but do you do any gluten free recipes? It is a growing problem due to the GMO wheat so many people just can't eat it. If you do , could you let me know please?
