Teeny tiny frozen banana bites topped with a smooth and buttery healthy caramel and rich and nutty peanut butter, all coated with a generous spoonful of drool-inducing dark chocolate and crushed peanuts because they look way more professional and fancy that way than without.
This healthy mousse recipe is one of those recipes which are so easy and basic I’m almost embarrassed to post it…almost. But the minute I ate the very first spoonful of this off-the-cuff dessert I knew I had to share it with you the next chance I got. There was no way I could live with myself knowing I’d deprived you of such an insanely quick, easy, yummy and even healthy dessert! Okay, so I might be exaggerating a little, but that’s just because I want you to know how great this mousse is!
I want to introduce you to my new favourite thing in the world. It’s deliciously sweet, wonderfully creamy, goes well with pretty much everything (as well as on its own!) and it’s even pretty good for you. That’s right – it’s coconut butter! I’d seen coconut oil on sale in my local supermarket for a couple of months, but the super-high price tag meant I’d never actually jumped into the deep end and bought a jar of the stuff.
