Chocolate Chip Cookie Dough Baked Oatmeal

I'll give you a second to let that title soak in. That's right - chocolate chip cookie dough baked oatmeal. All the nutritional health benefits of a low-fat, low-sugar baked oatmeal in the form of delicious chocolate chip cookie dough. Forget making any other breakfast recipes ever again - this chocolate chip cookie dough baked oatmeal should be the only breakfast you ever eat from now until the end of time!

This isn't the first time I've incorporated chocolate chip cookie dough into one of my oatmeal recipes and I'm sure it won't be the last. If you've never tried my Cookie Dough Oatmeal before, I seriously can't recommend it enough. Whereas that oatmeal recipe is kind of like eating piping hot cookie dough, this chocolate chip cookie dough baked oatmeal is more like indulging in a giant, fluffy chocolate chip cookie for breakfast - and who doesn't love the idea of that?

I get asked a lot what type of oats I use in my recipes and the answer is pretty embarrassing...Here in the Canary Islands we don't exactly have much of a choice when it comes to different types of products and the oats that I use in baking and every day cooking simply say "oats" on the packet. No "steel cut oats", "quick-cooking oats", "rolled oats" or anything like that - just oats.

I've looked it up online and I'm pretty sure they're quick-cooking oats (they only take 3 minutes to cook in the microwave to make oatmeal) but I can't be any more certain than that - sorry! If anyone has tried any of my oat-based recipes with specific types of oats, feel free to let me know how they turned out so I can improve my recipes!

As the temperatures get cooler and the days get sorter the closer toward the end of the year we get, I find myself craving baked oatmeal recipes more and more. In fact, I love the stuff so much that I don't eat it just for breakfast - you can often find me nibbling away on a bowl of the stuff for lunch, dinner or even dessert if I'm super hungry!

Chocolate Chip Cookie Dough Baked Oatmeal

Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 1 serving

Ingredients

  • ½ cup oats
  • ¼ teaspoon baking powder
  • cup natural yogurt
  • ¼ cup milk or water
  • 1 tablespoon sugar
  • 1 tablespoon milk chocolate chips + a few extra for topping

Instructions

  • Preheat the oven to 375F/190C.
  • Place all the ingredients into a small bowl and mix until well combined.
  • Scoop the mixture into an oven-safe dish and bake for around 20 minutes, until the top is golden brown.
  • Remove from the oven and leave to cool slightly for 5 minutes before eating.

    This sounds DEVINE!! Do you think it could be done without the yogurt.....it is impossible for us to get natural yogurt here 🙁 xx

      Hey Seychelles Mama,
      Thanks for stopping by! I've heard people follow similar recipes and use applesauce instead of yogurt. If you do use applesauce, you'll probably need to cut down on the sugar or omit it completely.
