Whilst most of the recipes on Pink Recipe Box have been inspired by other incredible bloggers or are my own creations, some of them have been inspired by my family - like this Drunken Leprechaun Milkshake. My mother-in-law loves a bowl of vanilla ice cream topped with Bailey's Irish Cream or Tia Maria (Kahlua for those of you across the pond) and always orders it for dessert when we take her out.
I'm not so good at drinking spirits on their own, or even when they're poured on top of ice cream, but I looove a good cocktail. So I threw all the ice cream dessert ingredients into a blender and turned a grown-up dessert into an alcoholic milkshake recipe so delicious you won't be able to stop at just one glass.
I made this milkshake entirely from scratch, simply because I had all the ingredients already on hand. If you love making things from scratch as much as possible, here are all the recipes you'll need to make a 100% homemade Drunken Leprechaun Milkshake: Vanilla bean ice cream recipe, Homemade Bailey's Irish cream recipe and DIY Tia Maria/Kahlua recipe. If you don't want the fuss of making everything yourself (I wouldn't have done if I didn't happen to have it all on hand!) I'm sure this milkshake would be just as amazing made from store-bought ingredients.
This St Patrick's Day recipe is super-rich, so I definitely recommend serving it in small shot-like portions or for dessert. Or you could add it into coffee! I bet that would be amazing. Although it might make your coffee a bit chilly. And probably isn't advised to add to your morning coffee before you jump in the car and drive off to work.

Ingredients
- ¼ cup vanilla ice cream
- ½ oz Bailey's Irish Cream
- ½ oz coffee liqueur like Tia Maria or Kahlua
- optional: chocolate sprinkles for topping
Instructions
- Place all the ingredients into a blender and process for 5-10 seconds, until the ice cream has broken down and everything is mixed up.
- Pour into a glass and add a couple of chocolate sprinkles on the top, if you like.

Nicola - Bailey's Irish Cream and ice cream is amazing! Wow; this is something I know that I would love. I'm with you on trying to drink spirits without something to balance out the potent nature of alcohol. I'm not a shot-doer or a whiskey sipper, but I can roll with a good cocktail!
