I love summer. And watermelon. And mojitos. But mostly mojitos. If you visit Pink Recipe Box often, you'll know that I love making seasonal drink recipes and this fresh watermelon mojito is one of my latest summer cocktails. Mint, lime, watermelon and white rum - what's not to love? We went out last night for a few drinks - on a school night, I know! A few turned into many and I'm more than a little tender this morning. But since this cocktail recipe is so delicious, I just couldn't hold off on sharing this drink with you any longer!
Chilling on the balcony whilst soaking up the sun with a cocktail in one hand and my Kindle in the other is one of my favourite ways to spend an afternoon (and my life, actually) and this easy watermelon mojito recipe fits in perfectly. It's rather sweet - something which is a must for me when it comes to cocktails - and is just so...drinkable! Plus, just look at that colour. It is the perfect peachy pink colour that I did not expect to get at all. The pink of the fresh watermelon simple syrup works so beautifully with the green of the mint and the lime it's unreal. It's like the perfectly paired outfit in cocktail form!
The base of this cocktail is - as I'm sure you can guess - the homemade watermelon syrup, which is oh-so good and easy to make! I originally set out to make this cocktail but I just couldn't manage to get the juice out of my watermelon. It might have had something to do with the fact that I was essentially trying to smush a watermelon through a sieve, but there you go. Instead, I decided to make a watermelon syrup and stir it in with classic mojito ingredients - and I was so glad I did! You don't have to use the syrup solely for this mojito - you could mix it with soda water or lemonade for a child-friendly summer drink so the little ones don't feel left out.

Fresh Watermelon Mojitos {+ Homemade Watermelon Syrup}

for the watermelon syrup
- ¼ cups large watermelon about 3 when cubed
- ½ cup water
- ¼ cup sugar
- 1 tablespoon lemon juice
for the fresh watermelon mojito
- 1 cup ice
- 8 leaves mint
- ¼ lime sliced
- 1 oz watermelon syrup
- 1 oz white rum
- soda water to dop
Instructions
for the watermelon syrup
- Slice out the flesh of the watermelon and chop it into small chunks. Place it in a saucepan and pour in the water and sugar.
- Cook over a medium heat for 15 minutes, until the watermelon has almost disintegrated. Use a potato masher or the back of a fork to mash any stubborn bits of watermelon that aren't breaking down.
- Leave to simmer for 10-15 minutes or until the syrup is fairly thick and the liquid has reduced greatly.
- Sieve it into a bowl and stir in the lemon juice. Pour into a jar, leave to cool to room temperature then store in the fridge.
for the fresh watermelon mojito
- Muddle the ice, mint leaves and lime in the bottom of a glass.
- Pour over the watermelon syrup and white rum.
- Top with soda water and serve.
