It's Friday and I need a drink. Care to join me? Instead of a yay, TGIF! drink, this is going to me more of a GRR, really?! drink. Hope you don't mind. A drink's a drink, right? When it's as amazing, frosty and delicious as this frozen daiquiri recipe it is!
Last August I bought my first car. A gorgeous coupe-cabriolet Opel Tigra in silver. Even though I only go out in it like once a week, I still love it. To open the boot, I press a button on the back and it opens electronically, James Bond-style. Anyway, I went to open the boot last week only to find that the button wasn't there. No button = no boot open.
Unfortunately, I can't just buy the bit I'm missing. I have to buy the whole electronic lock part - which costs about €110 - just to get my hands on the tiny metal cylindrical button that I need. Seems a bit excessive right? But I don't think I've got another option, so I'm going to have to fork out the cash if I ever want to open my boot again. It's a good job there's nothing in there!
But back to this amazing daiquiri recipe. It's perfect to celebrate a much longed-for Friday, an ever-nearing summer or just to stop yourself feeling annoyed about your lack of a boot button. When I first had the idea for this recipe, I was planning on doing a skinny piña colada, but the idea of a frozen daiquiri was calling out to me so I just went with it.
If you're a fan of summer cocktail recipes, you'll fall head-over-heels for this one. It's frozen, to help you stay cool in the heat. It's full of tropical coconut and pineapple flavours which always make me think of holidays. And it's got a punch of rum - everyone drinks rum during summer, right?
- 2 oz coconut rum
- ½ cup ice cubes
- ½ cup frozen pineapple chunks
- 1 teaspoon lime juice
- Place all the ingredients into a blender and process for about 1 minute until thick and creamy.
- Pour into a large glass and enjoy immediately whilst icy-cold.
