This healthy chocolate cupcake for one recipe was inspired by One-Bowl Chocolate Cupcake for One which is one of the most popular recipes on my blog and it has been for years. I think we can all agree that sometimes when a chocolate craving hits, there's nothing you can do but give in. Unless you've got amazing will power, in which case can you please tell me how you ignore the cravings? I'd love to know!

But you don't always have to give in to your inner chocolate monster in a bad way. I'm totally behind the notion that balance is key and this healthy chocolate cupcake has the perfect mix of non-healthy ingredients and super-nutritious ones to satisfy both your sweet tooth and your body's daily nutrition needs.

Not only does this healthy chocolate cupcake recipe make the perfect single-serving potion, but it also takes hardly any time to make at all! The ingredients can be stirred together in 5 minutes. Add 14 minutes baking time (during which you can make the frosting) and 10 minutes for cooling time if you pop your cupcake in the fridge. This leaves you with delicious chocolatey heaven in just 30 minutes. Who could say no to that?

I'm really honest on Happy Healthy Motivated and when a healthy version of a recipe isn't as good as the original, I let you know about it. But with this healthy chocolate cupcake for one, I don't have to disclose anything at all. It really is as good as any full-fat full-sugar cupcake!

The cake itself is light and fluffy, just like any good cupcake should be. And even though the frosting is made mostly out of avocado, you can't taste it - I swear! The deep flavor of the cocoa powder and the sweet honey are picked up so well by the bland avocado that it really does taste like frosting. My boyfriend, who hates avocado more than anything in the world, happily wolfed down half of my cupcake. Even after I told him what was in the frosting!

So even if you're a total avocado hater, I definitely recommend trying this healthy chocolate cupcake recipe. The frosting uses only ¼ of a small avocado. But you can easily quadruple the recipe to use a whole avocado and keep the rest of the frosting in the freezer for a quick pudding-like snack. Yum!

Healthy Chocolate Cupcake for One

Ingredients

  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons all-purpose flour
  • 1 pinch salt
  • 1 tablespoon granulated sugar
  • ¼ teaspoon baking powder
  • 1 teaspoon coconut oil can substitute melted butter or vegetable oil
  • 2 tablespoons skimmed milk can use non-dairy milk
  • ¼ small ripe avocado
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon honey

Instructions

  • Preheat the oven to 350F/175C and place 1 cupcake liner in a muffin tin.
  • In a small bowl, using a fork, stir together the 1 tablespoon cocoa powder, flour, salt, sugar and baking powder.
  • Pour in the melted coconut oil and milk and stir to form a smooth batter. Scoop the batter into the cupcake liner and bake in the preheated oven for 14 minutes, until springy to the touch. Leave the cupcake to cool in the muffin pan on a wire rack.
  • While the cupcake is cooling, make the frosting. In another small bowl with another fork, smash the ripe avocado up until smooth. Stir in the 1 tablespoon cocoa powder and honey and beat until you've got a frosting-like consistency. Place in the fridge to chill and spread on top of the cupcake after it's fully cooled.

    Oh you must know I'm feeling a bit sorry for myself right now - I need this cupcake in my life! I am very tempted to switch the sugar and honey for maple syrup as I love the flavour. Will definitely give this a go 😀

      One bite of this cupcake and you'll feel so much better, I swear! If you switch the sugar for a liquid sweetener, I recommend you reduce the milk in the recipe by about 1 tablespoon and reduce the cooking time by a couple of minutes. 🙂
