That's quite a title, isn't it? Healthy Four-Ingredient Soft-Serve Chocolate Peanut Butter Ice Cream. I tried to shorten it, but I don't think there's a word in there that isn't totally necessary. "Healthy" is important, because this ice cream is totally guilt-free. Honest!

"Four-Ingredient" is important because you probably have all these ingredients in your kitchen as you're reading this.

"Soft-Serve" is important because the texture is absolutely amazing.

"Chocolate" is important because...do I really need to tell you why chocolate is important?!

"Peanut" is important because it contrasts with the chocolate flavour perfectly.

"Butter" is important because I don't want you thinking that I've just shoved some peanuts in this ice cream.

"Ice" important because otherwise you might think that this is room-temperature creamy gloop.

And "Cream" is important because "Healthy Four-Ingredient Soft-Serve Chocolate Peanut Butter Ice" doesn't quite have the same ring to it.

It's been a good while since I last posted a healthy dessert recipe on Pink Recipe Box. According to my healthy recipe page, the last good-for-you dessert I posted was this Healthy Brownie Batter Dip way back in February! Now don't think I've gone off the band wagon and have been stuffing my face silly with fat-laden treats since February (although you wouldn't be far wrong...) it's just my healthy desserts have found a new home.

As you'd guess from the title, the magazine is very healthy active lifestyle-orientated, so that's where many of my healthy recipes have been going. Now, back to this healthy, delicious and easy to make recipe. Summer is coming up, so ice cream is playing on our minds, right? But if you're planning on hitting the beach, pool or water park at some point this summer, you're probably not going to relish the idea of downing buckets and buckets of ice cream. Well, you might be relishing the thought, but you won't like the result!

This ice cream allows you to enjoy all the flavours, textures and chilliness of ice cream without the guilt of the fat and sugar! The base for the ice cream is banana - yes, banana! - which is mixed with peanut butter, cocoa powder and milk to create the most deliciously smooth and creamy not-really-ice-cream that you've ever tasted. Whilst the banana does give the ice cream a teeny-tiny bit of a fruity taste, I don't really think it's that obvious.

Healthy Four-Ingredient Soft-Serve Chocolate Peanut Butter Ice Cream

Servings: 1 serving

Ingredients

  • 2 ripe bananas
  • 1 tablespoon cocoa powder
  • 1 tablespoon peanut butter
  • 2 tablespoons milk

Instructions

  • Peel the bananas and chop each one into fairly thin rounds.
  • Place the bananas in a Ziploc bag or sealed container and leave in the freezer until completely frozen.
  • When frozen, place the bananas in a food processor with the cocoa powder, peanut butter and milk. Process until all the ingredients are completely blended - you might have to scrape the inside of the bowl down a few times.
  • Taste and add more cocoa powder or peanut butter if you think it needs it. If the mixture is too thick, add more milk.

    This stuff is delicious, and I make it all the time for myself, using vanilla almond milk. I always buy lot's of bananas at one time and chop several up and freeze them in zip lock bags so when the mood strikes for ice cream I can make this. 🙂
