Yes, you read that right. This healthy strawberry chia seed jam is made with just 2 ingredients and is ready to eat in just 10 minutes! Forget about spending hours stirring fruit over a hot stove, messing about with pectin when you don't really know what pectin even is, and pouring cup after cup of sugar into the pan hoping the final result isn't a total mess. I love making stuff from scratch, but traditional jam always seemed a bit out of my league. Healthy peanut butter made in seconds the NutriBullet? Check! Homemade lemon curd that's good on absolutely everything? Check! But homemade jam? That seemed a little to difficult for me...until I came across the notion of chia seed jam!

Now, I don't know that much about traditional jam making - surprise, surprise! But I do know that it requires a thing called pectin to truly work -a hard-to-get ingredient which can be tricky to work with. And you also need boatloads of sugar. Using expensive ingredients that may or may not work out and adding thousands of empty calories isn't my style. But a fail-proof recipe that's cheap, easy to follow and good for you totally is.

If you've never worked with chia seeds before, they're super-absorbent, which is why they work perfectly in this healthy strawberry chia seed jam recipe. They soak up all the yummy fruit juices from the strawberries and keep a hold of them resulting in the perfect jam texture without any of the usual jam fuss!

I'm really lucky because I get chia seeds super cheap from my local supermarket. But if they're expensive where you live or they're tricky to find, you can buy chia seeds online from Amazon for a really good price. Don't worry about having leftover chia seeds. You can use them in all kinds of recipes - from healthy overnight oats and double chocolate chia seed pudding to key lime pie smoothies!

I think this healthy strawberry chia seed jam is perfectly sweet enough on its own, without having to add any extra sugar. But if you taste it during the cooking process (be careful - it will be crazy hot!) and decide you want it sweeter, add 1-2 tablespoons of honey or maple syrup. If you haven't got either of those things, you can sub an artificial sweetener or even sugar. It's totally up to you.

My favourite way to eat this healthy strawberry chia seed jam is to spread a thick layer of peanut butter on a slice of whole wheat bread and add a dollop of jam on top. It tastes soooo good! But it's also awesome stirred into oatmeal (like this PB&J back to school overnight oats) or even straight out the jar when you're craving a sweet treat and want something low-calorie.

Healthy 2-Ingredient Strawberry Chia Seed Jam

A super-healthy sugar-free jam that's so easy to make! All you need is a cup of strawberries and a sprinkling of chia seeds to make this sweet, rich and fruity jam that's ready to eat in 10 minutes.

Ingredients

  • 1 cup strawberries
  • 1 tablespoon chia seeds

Instructions

  • Place the strawberries into a small saucepan over a medium heat and cook for 10 minutes, until they're soft. Use a spoon or a fork to smush them down and break them up. 
  • When you've got a sauce-like consistency, turn off the heat and stir in the chia seeds.
  • Scoop the strawberry chia seed jam into a sterilised jar and leave to cool down to room temperature for a couple of hours before popping the lid on and storing in the fridge.

Notes

This strawberry chia seed jam stores really well in the fridge. I've had mine in there for about six weeks now without any mould or other nasties!
If you want to make your strawberry chia seed jam a little sweeter, add 1-2 tablespoons of honey just before you stir in the chia seeds.
