You might have noticed that it's been a bit quiet around Happy Healthy Motivated for the last couple of weeks. That's because I've been sick. As in, chest infection, ridiculous chest pain, coughing 'til I choke kind of sick. Every time I'm ill like this, I'm reminded of the downfalls of being self-employed. When you're sick, you can't just phone your boss and take the day off. You're the boss and still have to work if you want to keep the lights on.

So to keep my clients happy, I might have let Happy Healthy Motivated slip to the wayside a little bit. But now I'm on the road to recovery and I'm ready to bring you at least a month of Easter recipes. And showing you how to make chocolate nests for Easter seemed like an awesome place to start.

The temperatures are gradually increasing. The sun is delicately breaking through the clouds. And the beach in front of my house is becoming increasingly peppered with families and surfers. All that can only mean one thing - spring is finally here! And with spring comes one of my favorite holidays, Easter. Because who wouldn't love a holiday that places such a huge importance on chocolate?

Chocolate Easter Nests

Print Pin Rate
Total Time: 20 minutes
Servings: 6 small nests

Ingredients

  • 1 cup / 200g milk chocolate
  • 2 tablespoons butter
  • 1 cup / 60g All-Bran cereal
  • 18 Cadbury chocolate eggs

Instructions

  • Place the chocolate and butter together in a large bowl. Place the bowl on top of a saucepan of simmering water and stir regularly until melted. This should take around 5 minutes.
  • Pour the All-Bran cereal into the melted chocolate and stir until all the cereal is totally coated with the chocolate.
  • Use your hands and a spoon to shape the mixture into 6 nests on a baking tray. Create a little well in the middle of each nest for the chocolate eggs.
  • Place 3 small chocolate eggs in the centre of each nest and leave in the fridge for at least 1 hour to set.

Notes

These nests keep well at room temperature or in the fridge inside a sealed container for up to one week.
