Raspberry Tequila Sparkler

Let's have one last summer beach party before fall officially starts! You organise all the meat, side dishes, dessert, chairs, tables, cutlery, invitations and guests and I'll bring the drinks, that's fair right? Although it might not sound fair now, I'm sure you'll change your mind after you've had just one sip of this Raspberry Tequila Sparkler.

Want to know a secret? I didn't plan on sharing this recipe with you today. I planned on sharing a Very Berry Sangria, but because of poor planning and even poorer preparation on my part, I didn't have any wine or berries - the two main ingredients of Very Berry Sangria, surprisingly enough. Luckily for you I've got another amazing cocktail recipe that I came across earlier in the year that I've never shared with you before - and this one is served in a jug!

Do you like tequila? I love it - in fact one of my favourite cocktails is a Tequila Sunrise. I know the flavour can be a bit strong for some people, so I kept that in mind when developing this recipe. The tequila is just strong enough so you can taste a hint of it, but not so strong that it's overpowering and leaves you mouth tasting like the inside of a tequila barrel.

Plus all the citrus flavours from the mixture of lemons, oranges and limes really cuts through the alcohol and make it a refreshing cocktail perfect for enjoying during a beach-side summer party. Or a back-to-school fall party (providing your an adult, of course), or a winter wonderland Christmas party or even a bouncing spring party. What I'm trying to say is that this cocktail is good all the time and you should go make it right now. TGIF, you know?

Raspberry Tequila Sparkler

Servings: 1 large jug

Ingredients

  • 1 orange
  • 1 lime
  • ½ lemon
  • 12 frozen or fresh raspberries
  • handful of ice
  • 3 tablespoons triple sec
  • 3 tablespoons tequila
  • 1 cup cava or sparkling wine
  • 2 cups lemonade

Instructions

  • Slice or chop the orange, lime and lemon up into small slices or chunks.
  • Add it into the jug with the raspberries and ice.
  • Pour the rest of the ingredients into the jug and mix well.
  • Allow to sit for a few minutes for the flavours to infuse before serving.
