It's Friday and I've been without a kitchen for two weeks, during which every spare second of my life has been spent deconstucting the old kitchen and trying to suss out IKEA instructions for a flat-pack kitchen which are way more difficult to follow than IKEA lead us to believe. So I deserve a cocktail, right? But not just any cocktail, an amazing vodka grapefruit cocktail!
So although I don't have an oven, real hob or even a kitchen sink - I've been cooking all our meals in the microwave, toaster and on the camping gas stove and washing up in the bathroom - I've still got a fridge-freezer, which means drink recipes pose no problem at all. I knew this grapefruit cocktail drink recipe would need sweetening up, which is how I came to discover that you can make simple syrup in the microwave!
Simply put equal parts water and sugar in a microwave-safe dish and place in the microwave. The time it takes to cook will vary according to how much you're making. But after 1-2 minutes, the sugar will have dissolved and you'll be left with simple syrup! How awesome is that?
But back to this grapefruit juice cocktail. It pretty much contains everything I look for in an awesome cocktail. Cava - which you can substitute with Champagne if you're fancy, sparkling white wine if you're not and prosecco if you're feeling Italian. Vodka - my favourite spirit because it doesn't have much of a taste. Fresh grapefruit juice - the most delicious and prettiest colour juice. And finally homemade minty simple syrup. If you don't have fresh mint or can't be bothered with this step (even though you only need 2 minutes and a microwave!) you can totally skip it, but it adds a whole other dimension to this cocktail.
Stir everything together, pour it into a pretty glass jug or bottle then try and forget that you haven't had any kitchen counters for a fortnight and have to do all your meal prep on the floor.
Sparkling Grapefruit Blush
- ¼ cup sugar
- ¼ cup water
- handful fresh mint
- 1 bottle cava
- ¼ cup vodka
- juice from 2 grapefruit
- Place the sugar, water and fresh mint into a microwave-safe dish.
- Cook on full power for 1-2 minutes until the sugar has totally dissolved. Keep an eye on it to make sure the liquid doesn't bubble over.
- Leave the minty simple syrup to cool to room temperature before storing in the fridge for at least one hour until chilled.
- Stir together the cava, vodka, grapefruit juice and mint simple syrup together and serve immediately before the bubbles disappear.
