Place the beef mince into a medium-sized bowl. Mix in the breadcrumbs and egg until all the ingredients are well-combined. Set to one side
Heat 1 teaspoon of olive oil over a medium heat in a frying pan and finely chop the onion, red pepper, green pepper, jalapeño and garlic.
When the oil is hot, add all the ingredients you just chopped up (along with the sweetcorn) into the pan and sautee for 10-15 minutes, until all the ingredients are soft.
When the vegetables are cooked to your liking, tip them into the bowl with the beef mince and mix well.
Pour in the BBQ sauce and taco seasoning and stir again until everything is completely mixed together and all the ingredients are evenly distributed in the mixture.
Pour another teaspoon of olive oil into a large frying pan and heat over a medium heat.
Divide the beef mixture into two different sections and form each section into a burger shape. If the mixture is too damp to work with, add 1 tablespoon of breadcrumbs at a time until you can form patties with the mixture.
Cook the burgers in the frying pan for around 10 minutes on each side, or until crispy on the outside and cooked to your liking on the inside - I always serve my homemade burgers well-done.
When the burgers are cooked to your liking, serve them up on a hamburger bun and top with Mexican cheese, fried onions and whatever else you'd like.
