Healthy Peanut Butter Chocolate Chip Cookie Dough Bites

Servings 20 cookie dough balls

Ingredients

  • 1 cup cooked garbanzos drained
  • ½ cup oats
  • ¼ cup brown sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 4 tablespoons peanut butter
  • ¼ cup chocolate chips
  • Optional: melted chocolate cocoa powder, icing sugar for coating

Instructions

  • Place the garbanzos, oats, brown sugar, milk, vanilla and peanut butter into a food processor and blitz until smooth.
  • Stir in the chocolate chips.
  • Divide the mixture into balls as big as you like and dip in melted chocolate or roll in the coating of your choice.

Notes

1. I use garbanzos from a jar that have been stored in some sort of water for this recipe. If you only have dried garbanzos, make sure you soak them before you use them and measure them after they've been soaked.
2. This recipe only uses a small amount of sugar. If it's not sweet enough for you, you can always add more!
