In a microwave-safe bowl, stir together the oats and brown sugar.
Pour in the water, milk, vanilla extract and 1 tablespoon of lemon curd and stir again.
Place the bowl in the microwave and cook on full heat for 2 minutes. Keep checking the bowl to make sure it's not overflowing - happens all the time to me!
After 2 minutes, leave the oatmeal to sit for another 2 minutes in the microwave.
Top with the chocolate chips and cook for a final 30 seconds on full heat.
Dollop the other tablespoon of lemon curd on top and enjoy your chocolatey lemony breakfast!
