Lemon & White Chocolate Oatmeal

Servings 1 large serving

Ingredients

  • ½ cup oats
  • 1 tablespoon brown sugar
  • ½ cup water
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon curd separated
  • 1 tablespoon white chocolate chips

Instructions

  • In a microwave-safe bowl, stir together the oats and brown sugar.
  • Pour in the water, milk, vanilla extract and 1 tablespoon of lemon curd and stir again.
  • Place the bowl in the microwave and cook on full heat for 2 minutes. Keep checking the bowl to make sure it's not overflowing - happens all the time to me!
  • After 2 minutes, leave the oatmeal to sit for another 2 minutes in the microwave.
  • Top with the chocolate chips and cook for a final 30 seconds on full heat.
  • Dollop the other tablespoon of lemon curd on top and enjoy your chocolatey lemony breakfast!
