Healthy Oatmeal Pancakes

Ingredients

  • 1 ½ cups oats
  • 2 cups milk
  • ½ cup whole-wheat flour
  • ½ cup all-purpose white flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • pinch salt
  • 3 tablespoons yoghurt
  • 2 eggs

Instructions

  • Place the oats into a large bowl and pour the milk on top. Leave to soak for 30 minutes.
  • Stir in the remaining ingredients.
  • Scoop out about ¼ cup of pancake mix each time and cook in a greased skillet over a medium-high heat, flipping when air bubbles burst through the top of the pancake.
  • Keep warm until ready to serve.
