Simple Moroccan Chickpeas

Servings 1 ½ cups

Ingredients

  • 1 cup chickpeas cooked and drained
  • ½ tablespoon paprika
  • ½ tablespoon ground cumin
  • ½ tablespoon ground ginger
  • ½ tablespoon tumeric
  • ½ tablespoon cinnamon
  • pinch black pepper
  • pinch salt
  • ½ onion finely sliced
  • 1 clove garlic minced
  • ¼ cup raisins
  • ½ cup chicken/vegetable stock

Instructions

  • Mix all the spices together with the chickpeas.
  • Gently fry the onion in olive oil for about 5 minutes or until soft. Add in the garlic and cook for a further minute or until fragrant.
  • Stir in the chickpeas, raisins, and stock and bring to a boil for about 3 minutes.
  • Reduce to a simmer and cook for 15-20 minutes, or until the sauce has reduced by half.
