Raw Vegan Brownies

It really doesn't get more dense, fudge-like and flavour-packed than these raw vegan brownies. Made from just 5 simple ingredients and coming together in 15 minutes max, these healthy brownies are the perfect thing to satisfy your sweet tooth whenever it starts kicking off. Keep it purely raw and ditch the melted dark chocolate topping or keep it and enjoy the blissful contrast of textures.

Ingredients

  • 30g walnuts plus 2 whole walnuts for topping
  • 10g almonds
  • 4 pitted dates (if dried, soak in water for 10 minutes before using)
  • ¼ cup cocoa powder (can sub cacao powder if you truly want your brownies to be 100% raw)
  • 2 squares dark chocolate (omit if you truly want your brownies to be 100% raw)

Instructions

  • Place the walnuts (except the 2 for topping), almonds, dates and cocoa powder into the bowl of a food processor. Process on high speed for 2-3 minutes, until the ingredients have been broken down and have formed a dough-like consistency. You’ll probably need to scrape down the inside of the bowl with a spatula a couple of times to make sure everything is well combined.
  • Remove the brownie batter from the food processor, divide it in half and form into 2 brownies. Set to one side.
  • In a small microwave-safe dish, heat the chocolate in the microwave for 30-40 seconds, until it’s completely melted.
  • Spoon the melted chocolate on top of the brownies and top each one with a walnut.
