Healthy Mango & Raspberry Fruity Rollups

Ingredients
  

  • 4 cups diced mango or raspberries fresh or defrosted

Instructions
 

  • Preheat the oven to 175F/80C and line one large baking tray with parchment paper or a non-stick mat.
  • Place the fruit of your choice into a food processor and blend for 2-3 minutes until completely smooth.
  • Spread the blended fruit into the lined pan using a spatula. Try and get it as thin as you can.
  • Place the baking tray in the oven and bake for 3-4 hours, until the blended fruit is dry and you can bend it. If the underside of the fruit is wet or tacky, flip the whole fruity layer over and bake on the other side until dry.
  • Remove the fruity rollups from the oven and place a clean sheet of wax paper on top. Pull off the parchment paper and roll the fruity rollups and wax paper together into one long sausage.
  • Slice the fruity rollup into thin spirals and enjoy.

Notes

To store, place these fruity rollups inside a sealed container and keep in the fridge for up to one week.
