This recipe for one cookie really is like the perfect marriage between a chocolate chip cookie and a cake. It combines the absolute best of both recipes - the melted, gooey chocolate chips and the crisp, crunchy outside of a chocolate chip cookie with the light, fluffy texture and feels-like-a-hug-in-a-ramekin sensation that you get from a warm, fresh-from-the-oven cake. Sigh. Please give me a minute whilst I go and whip another one up.

Since you only need one bowl, one ramekin and 20 minutes baking time to make this skinny single-serving dessert, it's not like you're going to have to wait long until I'm back, either. Seriously - it really is that easy. As long as you can measure out ingredients and not fall asleep whilst this dessert is baking, you can do it. Even if you've never attempted any sort of baking before!

So it's delicious and it's quick to make. That's gotta be it, right? Nope! It's also on the healthy side. It's almost entirely fat free (apart from the fat which you get in the chocolate chips), uses whole-wheat flour, brown sugar (which is less processed and more natural than white sugar) and doesn't even require an egg, for those of you who are allergic or are trying to keep your cholesterol as low as possible.

So lets recap. 1 - delicious, 2 - quick to make and 3 - skinny. That's got to be it, right?! Wrong again! This recipe only makes one serving, making it perfect for when you're craving a decadent dessert, but can't be trusted with a pan full of brownies. I've tried my fair share of single serving recipes in my time - living with someone as fussy as My Official Treat Taster means I often have to cook two different dishes each meal time! - but this is one of the best single serving desserts I've ever tried - seriously. I bet if you give it a go it will become one of your favourite single serving dessert recipes, too.

Skinny Single-Serving Chocolate Chip Cookie Cake

Ingredients

  • 3 tablespoons whole-wheat flour
  • 2 tablespoons brown sugar
  • 1 tablespoon chocolate chips (milk dark, white - whichever you want!)
  • ¼ teaspoon baking powder
  • â…› teaspoon baking soda
  • pinch salt
  • 1 tablespoon apple sauce
  • 2 tablespoons milk

Instructions

  • Preheat the oven to 350F/175C and grease a small ramekin which can hold at least 1 cup in volume.
  • In a small bowl, combine all the dry ingredients.
  • Scoop in the wet ingredients and stir.
  • Pour the batter into the greased ramekin and bake in the oven for 20 minutes, until the top is brown and crisp.
  • Leave for 5 minutes to cool slightly before enjoying hot.
